Why we love this wine?
The Thymiopoulos family had been growing Xinomavro grapes on the southern tip of the Náoussa wine region, one of Greece's most established producing age-worthy, lively reds on the slopes of Mount Vermio, for several generations. Earth and Sky by Thymiopoulos Vineyards was the Xinomavro that changed everything we knew about the red variety of Naoussa. With the modern version of XINOMAVRO, you do not have to wait for decades for the tannins to soften. Earth and Sky by Thymiopoulos Vineyards is a Xinomavro that you can enjoy throughout all seasons, with or without food!
Served best with lamb on the spit, kokoretsi (a Greek dish consisting mainly of lamb and goat intestines), duck, goose, grilled meats, and offal, fat and rich cheeses such as oil cheese, cream cheese, and gruyere.

Limestone with schist and clay top-soil
Warm climate tempered by the Mediterranean winds and by the air flowing down from Vermio mountain plays a determinant role in the ripening period, protecting the grapes by maintaining low temperatures. High altitude and big diurnal range around Fytia village add complexity and finesse to the blend.

Grapes are 60% de-stemmed, macerated for 40 days and fermentation has been completed with indigenous yeasts.
18 months in third-use, 500-litre French oak barrels
It has a dark red color, with orange highlights. The classic aromas of the variety are distinguished, with the tomato and forest fruits starring and wood, spices, and vanilla in the background. It has an explosive mouth with glaring but polite tannins and the ideal acidity in a really long-lasting aftertaste.
